Steps to Cook the Perfect Filet Mignon

Steak lovers all around agree that there’s something special about the filet mignon. This cut of steak is known to be the most tender cut available. While extremely tender, the filet mignon is also more difficult to prepare than other popular cuts. Trying to cook a filet mignon the same way that you cook other cuts of steak will lead to a bad outcome. Instead, follow these steps to achieve a perfect filet mignon every time.

Choosing the Pan

Before you can cook your steak, you need the right pan. Opt for a high quality 12 in skillet made of either copper core, carbon steel, or cast iron. Each of those pans will require proper maintenance and they aren’t cheap. Do your research before you decide which type of pan to purchase.

Proper Thawing

Filet mignon needs to be cooked at room temperature. You should remove the steak from the refrigerator about 1 hour before you want to start cooking it. when you take it out, brush it with oil and put pepper to taste. cover the steak and let it rest while it gets up to the right temperature.

Keeping it Moist

The oil you apply during the thawing process will help keep your steak moist. Another important factor is when you salt the steak. Salting too soon will dry the steak out, even with the oil application. Instead, apply salt right before you begin cooking.

Preheat the Pan

Never put the steak on a pan before the pan is heated. You should get you over up to 400 degrees and then allow the pan, without the steak, to sit in the oven for 15 minutes. This is how you’ll achieve the beautiful sear on the outside of your steak without drying the inside.

Sear the Steak

Now that your pan is hot, it’s time to begin cooking. Place the filet mignon into the hot pan. Allow it to cook for 3 minutes per side, flipping once in between. Filet mignon isn’t a naturally flavorful steak so it’s recommended to use butter, garlic, and other spices in the pan while you sear the steak.

Cooking the Steak

Searing the steak is the first step towards cooking, but it doesn’t achieve the desired internal temperature. After you’ve finished searing the steak simply set the pan into the oven again, with the steak in it, to finish cooking. Cooking time will vary depending on how well done you like your steak.
