Artisanal pasta completely differs from this method. Instead, artisanal pasta is made by hand! It’s a much slower process than commercially made pasta, but making it this way ensures that the ingredients are preserved.

Flavor

Believe it or not, there’s actually a pretty significant contrast in flavor between the two types of pasta. The way these pastas are prepared actually affects this quality a lot. When pasta is prepared commercially, they have to speed up the drying process so it can be ready for commercial use a lot faster. Their drying process usually takes around a couple of hours in this instance. 

On the other hand, artisanal pasta doesn’t have problems with these deadlines, so they can take more time to prepare. Their drying process takes several days! If that sounds like a long time, the flavor that results is well worth the wait. Because commercial pasta has to speed up their drying process, the flavors are nowhere near as defined as artisanal pasta. A lot of what goes into that flavor dries out quickly in the faster drying process. The flavor of artisanal pasta is much more noticeable because their ingredients don’t dry out.
