It’s cut from the short loin, which is one of the most flavorful parts of the cow, and we choose to serve it with bone-in for extra flavor and unique texture. This type of steak also has a bit more fat attached to one side of it due to its location. If you’ve experienced Filet Mignon or Ribeye, this is another surefire hit that you’ll love. 

Bone-In Cowboy Ribeye

An incredibly juicy and flavorful cut of steak that is located in the rib section of the cow. Restaurants refer to it as “cowboy” because the bone is included. Its marbling of fat makes it great for a slow grill or roast. Bricco’s version of the Cowboy Ribeye is 24 or 36 ounces, making this dish huge! This type of cut is excellent for a large gathering or celebration. It’s a unique steak that pairs well with wine from our vault as well.
